Ingredients
1 cup cottage cheese (full-fat recommended)
2 large eggs
½ cup all-purpose flour or almond flour
½ teaspoon baking powder
½ teaspoon garlic powder
¼ teaspoon salt
Optional: chopped herbs like rosemary, chives, or parsley
Instructions
Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
Blend cottage cheese and eggs until smooth.
In a mixing bowl, combine the blended mixture with flour, baking powder, garlic powder, salt, and herbs if using.
Stir until a thick batter forms.
Spread the batter onto the baking tray into a rectangle or circle about ¼ inch thick.
Bake for 20–25 minutes until golden and lightly puffed.
Cool slightly before slicing and serving.
Notes
Make it gluten-free by using almond or coconut flour (with extra egg).
Add toppings like sesame seeds or everything bagel seasoning before baking.
Pairs great with hummus, soup, or as a base for flatbread pizza.
Store leftovers in an airtight container in the fridge for 4 days, or freeze up to 2 months.
